Blueberry Lemon Gummies

Blueberry Lemon Gummies

Makes: Approximately 12 Total Time: 5 minutes preparation + 20 minutes to set


  • ½ cup organic blueberries (if using frozen, leave out to thaw a little beforehand)
  • 60ml (approximately ¼ cup) freshly squeezed lemon juice
  • 1 Tablespoon raw honey
  • 1 Tablespoon (ie. Great Lakes) 


  1. Add all ingredients into mixing bowl to mix and heat 4 min/90˚C/speed 4.
  2. Once finished, pour into silicon ice cube moulds.
  3. For quick setting: place in freezer for about 20 minutes, or until solid.
  4. For longer setting: place in fridge for about 2 hours, or until solid.
  5. Store in airtight container in fridge for up to 2 weeks.


  1. Using food processor, blitz blueberries and lemon until pureed.
  2. Add to saucepan over medium heat. Let liquid warm through (avoid boiling).
  3. In a separate bowl/cup, add gelatin and cover with cold water. Stir into a paste, then add straight to saucepan along with honey. Note: mixing in cold water first helps to prevent gelatin becoming clumpy. 
  4. Stir continuously for about 7-8 minutes.
  5. Once the liquid is a smooth consistency and all the gelatin has dissolved, pour into silicon moulds.
  6. Follow steps 3-5 above.


  1. The first time my daughter had these (2) she consumed an entire plate full with eagerness and joy, and I didn’t mind because I knew there was nothing bad in them. In fact, they were GOOD for her 😀 Definitely a winner with us.

    I’ve made these many times since then, and they’re a great treat to take to shared food events. They disappear very quickly!

  2. I have made these ones and they are nice and a refreshing, I think they would be really soothing if you had a cold too rather than lozengers! Recently at my child’s third birthday party I made some with raspberries and some with freshly squeezed orange juice. I made a lot and they went, very fast!!
