Chicken Meatballs with Tomato Basil Sauce

Chicken Meatballs with Tomato Basil Sauce

Serves: 4 | Total Time: 30 minutes

INGREDIENTS

Meatballs

  • 400g free-range chicken breasts (or thighs)
  • 2 Tablespoons rice flour*
  • 1 teaspoon dried oregano
  • 2 free-range eggs
  • ½ teaspoon iodised sea salt
  • 2 pinches ground black pepper
  • 1½ Tablespoon olive oil

* Paleo/Starch free Alternative: omit rice flour

Tomato Sauce

  • 1kg fresh tomatoes, quartered
  • 1 garlic clove, crushed
  • 1 brown onion, quartered
  • 1 red capsicum, de-seeded
  • 1 large carrot, peeled and quartered (optional)
  • 2 generous handfuls fresh basil leaves
  • 1 teaspoon iodised sea salt
  • 2 pinches ground black pepper

PREPARATION

1. Cut chicken into small pieces, place into food processor and pulse until meat is coarsely ground. Thermomix: 10 seconds/speed 6.
2. Add rice flour, oregano, eggs, salt and pepper. Process until well combined. Thermomix: 10 seconds/speed 5.
3. With moistened hands, shape mixture into approximately 16 balls. Heat oil in large fry pan over medium-low heat. Add meatballs and cook until lightly brown, about 5 minutes.
4. To make the sauce, add fresh tomatoes, garlic, brown onion, capsicum, carrot, salt and pepper to food processor. Blend on med-high until tomatoes are crushed, about 8 seconds. Thermomix: 8 seconds/speed 6.
5. Pour tomato sauce over meatballs in fry pan. Bring to the boil. Reduce heat to a simmer, cover and cook for 15-20 minutes. With 5 minutes remaining, add basil leaves, stir through, then re-cover for the remaining time.
6. Serve on its own or with sweet potato mash. Enjoy!
