Simple Salmon Patties

Simple Salmon Patties
Makes: 7-8 patties | Total Time: 20 minutes
INGREDIENTS
- 1 tin (415g) wild caught pink salmon, well drained (remove vertebrae bones) (ie. Coles/Woolworths Select brands)
- 2 free-range eggs
- ¼ small red onion, finely diced^
- 2 tightly packed Tablespoons chopped fresh coriander leaves
- 1-2 pinches each iodised sea salt and black pepper
- Sesame seeds to coat patties
- 1 Tablespoon olive oil
Serving salad and dip
- ½ cucumber, diced
- 1-2 tomatoes, diced
- 1-2 carrots, grated
- ¼ small red onion, finely diced^
- 1-2 Tablespoons fresh coriander, chopped
- Squeeze lemon juice (optional)
- 4 Tablespoons hommus^* (ie. Roza’s brand)
^ FODMAP Friendly Alternative: omit red onion and swap hommus to ¼ avocado
* Paleo/Starch free Alternative: swap hommus to ¼ avocado
PREPARATION
- Drain salmon and remove vertebrae bones.
- Add salmon, eggs, chopped coriander, red onion, salt and pepper into mixing bowl or food processor.
- Mash and mix to combine ingredients. If doing it manually, use back of spoon to mash and mix together. If using a food processor, mix on slow for 10 seconds, or until well combined.
- Pour sesame seeds onto a plate. Using a dessert spoon, spoon mixture into hands and create small round ball. Press flat onto sesame seeds and coat both sides.
- Pour olive oil into frying pan, over low-moderate heat. Cook 5-6 minutes on each side, until lightly golden.
- Prepare mixed salad and drizzle with lemon juice. Serve alongside patties and hommus.
- Enjoy this deliciously light and nutrient-rich dish!
